A classic Chablis nose features notes of oyster shell, iodine and mineral reduction on the ripe but fresh white aromas of passion fruit and pear. The rich yet racy saliva-inducing medium weight flavors possess equally good length and balance. This firm effort will also need to add depth over the next 8 to 10 years.
The 2019 Chablis 1er Cru Vaillons is one of the more expressive wines in the range at this early stage, wafting from the glass with notes of lime zest, crisp stone fruit, freshly baked bread and subtle hints of nutmeg. Medium to full-bodied, satiny and precise, it's a lively, penetrating wine that will offer a broad drinking window. The Vaillons comes from holdings where the soils are deeper than in Séchet, and that shows in greater textural plentitude.
The 2019 Chablis Vaillons 1er Cru has a very fragrant bouquet with yellow flowers flanking the sensual citrus and orange peel scents. Very harmonious. The palate is well balanced with a slightly honeyed texture on the entry. A fine bitter edge counters the richness that defines the finish. A slightly more opulent style from Dauvissat... but still Chablis.
Pale lemon. A leaner stricter nose after the comparative opulence of Sécher. Then gorgeous ripe lemon zest, flavours, which fill the mouth then refine to a clean pure long finish. Deep limestone marls here retained enough humidity. Very long, very classic, great wine.
