The graphite comes through clearly here with blackcurrants, boysenberries and cherries. Full-bodied and plush considering it’s a mountain vineyard, with sweet fruit and decadence to the freshness. Drinkable but give it time to soften. Better after 2028.
The 2021 Cabernet Sauvignon Cimarossa is a gorgeous, expressive mountain wine. The aromatics are quite open, while there's a ton of textural depth. Most impressively, the tannins are incredibly polished for a mountain Cabernet. Dark berry fruit, mocha, leather, iron, dried fruit and leather soar out of the glass. There's plenty of structure, but also very fine balance.
Lastly, the 2021 Cabernet Sauvignon Cimarossa Vineyard comes from a vineyard on Howell Mountain and, like all the Cabernet Sauvignon releases here, was brought up in new barrels. Bouquet garni, iron, cassis, and blue fruits all define this quintessential mountain Cabernet, which is full-bodied, has ripe, polished yet building tannins, a great mid-palate, and one heck of a great finish. It offers a touch of charm and pleasure today, yet this warrants 4-5 years of bottle age. It will see its 20th birthday in fine form as well.
