Extra Old Particular Caol Ila
This whisky has matured in a Sherry Hogshead for no less than 30 years from 1991 since it came out of the stills of the famous Caol Ila distillery. Of course this is done according to the well-known philosophy of Douglas Laing and, in addition to the fact that this whisky is filled at cask strength, no colorant has of course been added and there is no cold filtering. This ensures that the aroma and taste is optimally preserved in this jewel of an Islay whisky.
190 bottles came out of the Sherry barrel. An allocation of only 9 bottles of this very small edition has come to the Netherlands. This special whisky is of course presented in a beautiful box.
Tasting Notes:
• Nose: The Sherry influence is very evident with stewed fruit and allspice, followed by salty Islay peat smoke and dark chocolate.
• Palate: Deliciously thick with damp fall leaves, spiced oak, a leathery sweetness and campfire ash.
• Finish: A long finish that lingers with burnt brown sugar and mocha developing into cured ham and an earthy style.

Colour: copper/mahogany. Nose: oh! A box of cigars, incense burning in an old Buddhist temple, bags of prunes and bags of Smyrna raisins, old Demerara rum, chocolate filled with blueberry jam, then a little teak oil and fresh-waxed old furniture. Some time ago we also used to say 'old Jag'. The old Demeraras are then coming to the front, that's splendid. Mouth: stunning tango. Very heavy cask, immense pineyness, and yet it all works. In truth it may be flawed technically, way too woody, but these essential oils, thyme, fir wood, rosemary, raw chocolate and green oranges just do the trick impressively in my book. Finish: long, still very piney, but this time with some thick honey and marmalade in the background. Black raisins. Comments: this old Caol Ila, full of wood and sherry, is a bit bonkers, but you just can't resist this style. Long live the flaws! (But are they really flaws? Good question …) A magnificent and very extreme bottle.
