At one of the first days of Autumn we wanted comfort food. Beef Short Ribs a recipe from Gordon Ramsey, those slow cooked ribs, with crispy bacon, mushrooms and vegetables, needed a wine with body.
We choose the Brunello di Montalcino Castelgiocondo 2007 from the Frescobaldi family, always one of my favorites. This wine is a rich, complex with a lot of black fruit from the forest, licorice and spices which are woven together nicely in deep layers.
The 36 months of wood you found back in the bold tannins, tabaco palate and with a the long finish. This was great wine for the job, it made this dish complete. BOW 8
