"Caribbean Spice"
This distillery was built in 1938 within Hiram Walker's massive grain distillery at Dumbarton and was closed in 1991. This make has lovely legs and a lovely rich red-gold colour. The nose is of bananas - banana rum, banana toffos and banana custard, even a hint of banana and vanilla essence. Wafts of pina colada and spicy wood in the background, transport you to a warm evening in the Caribbean. In the mouth it is very spicy and warming but also dry. With water (and it can take a fair amount), the nose simply expands: more bananas, joined by more pineapples and all dusted with all spice and cinnamon. The diluted taste it is dry and spicy, with cinnamon, demerara sugar, and warm mashed bananas on toast. An exotic dram.
